While sweet almonds are safe and healthy, bitter almonds contain large amounts of amygdalin, the same compound found in apple seeds, which can convert into cyanide when metabolized. Just a few bitter almonds can be fatal, especially for children.

Bitter almonds are banned in many countries for this reason, but they’re still available in some regions as flavoring agents or in alternative medicines. Consuming just 5–10 raw bitter almonds can be fatal to a child, and 50 or so can be deadly for an adult.

Unlike sweet almonds, bitter almonds taste significantly more pungent and are usually used in almond extracts after proper processing. However, raw versions sold online or through unregulated markets can be extremely dangerous.

It’s critical to read ingredient labels and avoid consuming any almond product unless you’re sure it’s made from sweet almonds. When in doubt, avoid any almonds labeled as “bitter” or “wild” altogether.
